My friends Fred and Phyllis are avid gardeners who always have a surplus of tomatoes by September. They don’t allow any to go to waste by drying them in a food dehydrator. Phyllis gave me a jar the other day and as you can see I’ve nearly polished it all off. Dried tomatoes are super concentrated tart and crisp, mmm!
The trick, according to Phyllis, is to dry them in a food dehydrator for a full 24 hours (Jake and I have this dehydrator, which we love). Tomatoes are pretty much all juice so the process can take a while. But the rewards are worth it. And such a healthy snack.
