
Feast your eyes on my favorite cookie: Peanut butter chocolate chip, created by Jake.
He whipped them up at 11 o’clock last night after a long, tiring day in the sun building fences with his remote control Bobcat. What a funny image: My tough-as-nails husband laboring in the sun by day, remote control strapped to his private parts, only to rush home and whip up a batch of cookies that are so delicious they put Betty Crocker to shame.
(In case you’ve ever read this blog and wondered, Why on earth would this confused woman ditch her career in New York to move to the sticks and raise chickens? What is wrong with her???!! To which I can only answer, it’s the man’s fault. He’s just that good.)
Anyway, mine is a woefully unsophisticated palate when it comes to dessert — you can keep your ganache and galettes, thank you very much. I much prefer pure Americana when it comes to satisfying my sweet tooth: peanut butter chocolate chip cookies, apple pie, vanilla ice cream, elaborate Jello cakes layered with whipped cream and berries (and the latter not for the kitsch value — oh no! — but because it tastes real good!)
The reason I love these cookies, aside from Jake making them for me, is for the texture. They have the condensed sandiness of a peanut butter cookie, yet are gooey like a classic chocolate chip. How can two such opposing textures exist in one cookie? I don’t know! It blows the mind. It defies the senses. Yet co-exist they do.
I would give the recipe but I don’t even think Jake knows what it is.

I can resist homemade ice cream, homemade cake, homemade chocolate mousse, but a simple homemade cookie? That overpowers me. ( I will never refuse a homemade maple doughnut either. )
Aah, homemade maple donuts. Brings back sweet memories of a serious sugar crash.
